I want to play an healing class but i need to be able to farm my own consos.
Which healing class is better for farming?

Paladin , only one which is best to farm as Healer due to AoE pulls and plate user.

Druids and Priests are extremely slow.

Can u give me an example of a good paladin spec for both roles?

Holy priest, because you can farm DM E lashers in your PvE spec

imp SOR is flat 5-8 (average) damage increase to SOR for 1h weapon (depend on weapon speed), flat 20-50 (average) damage increase to SOR for 2h weapon (depend on weapon speed) and is not suppose to scale with Spell Damage.

Do you think it's better to use SOR or SOC with a spell dmg build?
