You simply replace e.g Dwarf Male ID inside the mpq with the desired ID through warcraft studio.
What the codes are, I do not know.. Never attempted modeledit myself but friends has shared theirs with me.
Have not tried it here on Nostalrius however but as I mentioned I know you can bypass it with replacing the model ID codes with the model ID you want character to look like.
It's only visual to you however and not world editing.
