This was addressed already - they are going to prevent characters from leveling professions until they ding 70. This won't be in effect at server launch, though. I don't have an exact link to the source, it's somewhere on the website.

not sure why it should be locked, noone is advertising an other server. Just talking about what players like.

If the basement of the server is what is most fun we could change many things on Nostalrius too. I personally think making it instant 58 is breaking almost the half of the game. Hey just my opinion, im not going to play in Corecraft so gl to you.

I see instant 58 as neither a problem nor "not blizzlike" in fact, when Blizzard launched TBC not only did I get instant 58, I got FOUR instant 60s, and a couple of them had amazing gear to boot

Its been said, if people want vanilla experience its there on other servers. I understand why some people dont want free instant 58s, but I think it will do more good than harm to let people jump straight into the content they came for

I would like to say they should just make it one free 58 per acct, but assuming accts are free.. theres really no point :/
