well you can change models of NPCs (and environment and pretty much anything else) through MPQ files, basically the way blizzard patched the game.

with some knowledge about it, someone should be able to let your mount look like this (only visible to you).

You can avoid the detection by altering the original mpq, the ID codes inside of it.
