I just wanted to share a workaround that I found and used for AMD Video Cards which do not show the proper Maximum Resolution in-game when using multiple Monitors. What this workaround does is fake the Maximum Resolution for all Monitors to the Resolution that you'd like. You will then need to go into your Windows Screen Resolution Settings and reset their proper settings.
1. Open AMD Catalyst Control Center
2. Select "Properties (VGA Display)"
3. Select the Monitor with the smaller Resolution, uncheck "Use Extended Display Identification Data" and select the Maximum Resolution that you'd like in-game. Repeat for other smaller Monitors if needed.
4. Open Windows Screen Resolution by Right Clicking the Desktop and Select "Screen resolution".
5. Adjust all Monitors to their appropriate Resolution and position.
