"Classic WoW" is a broad phrase that doesn't have a specific definition. It means different things to different people. Some people think of "Classic WoW" as the original game that launched in 2004 up to just before the first expansion, The Burning Crusade, was launched in 2007. Other people think of "Classic WoW" as the original game and first two expansions collectively: World of Warcraft, WoW: The Burning Crusade, and WoW: Wrath of the Lich King, before sweeping changes were made towards the end of WotLK/launch of Cataclysm and the game was revamped permanently. It's also the name Nostalrius chose when designing their installer: "World of Warcraft Classic."
"Vanilla WoW" specifically refers to the first entry in the WoW series before any expansions were launched. It is WoW from patches 1.1.0 to 1.12.1. The phrase is derived from the computing term "vanilla software" when referring to a program or hardware in its original state and not having been customized or changed yet, hence, the original World of Warcraft before any expansions changed the game.
