Let's just check what the actual differences are, and then you can make the choice.
PvP Server:
-Very high population (10k people at peak times)
-Very competitive
-Lots of world pvp (and ganking)
-Lots of raiding guilds
-Balanced factions, in terms of population
-On patch 1.7 (MC, BWL, ZG are out)
PvE server:
-Less people than the PvP server, ~2k during peak times.
-More laid back
-PvE obviously, so no ganking or much wpvp.
-Decent amount of raiding guilds
-More alliance than horde
-On patch 1.5 (MC is out)
Now let's look at the factions.
Alliance
-Paladins and dwarf priests their fear ward make PvE a bit easier for the alliance
-Easy access to all the raids and dungeons, making travel easy
Horde
-Shamans for amazing raid healing and totems for dps boots
-Inconvenient travel to most raids
-No salvation from paladins, or fear wards.
-Pretty great PvP racials (Will of the forsaken, bloodfury, extra stamina)
That's about it really. If you're not into a super populated, competitive server then you're probably better off on the PvE realm. You won't have a problem finding a guild, or groups on either realm.
As a final note, dwarf priests are always needed, and as a dwarf priest it will be very easy to get into raiding.
