I was thinking of going with herbalism/mining just to sell materials on the AH. I asked around and was told that this is a bad combo and that herbalism/alchemy is the real money maker. Is this true? I am curious as to how this is a better way to go, selling materials for several professions seems to be a good idea but I am brand new to the server so I'm not exactly sure.

Yes, but you're going to have a terrible time trying to get the high level herbs from the groups that camp the nodes.

Depends on your class but

Mage/Priest farm Dm East, the small packs of plants can be Aoe'd side entrance
Melee: Bats in EPL tons of vendor greys
Druid/Pally: donno
Warlock: can farm elite demon spots by enslaving an elite demon

any class can be a herbalist.
