This is correct. People say soft and hard because 420 will make you uncritable to lvl 60 mobs and 440 for lvl 63 mobs.

Anyone who tells you to switch to Prot spec before 60 is an idiot. Once you are 60 if you like pvping stay fury or arms and just make sure you build a good tanking set. By no means is Prot spec necessary until 40 man content. If you have weak tank gear prot spec will make tanking easier in instances like UBRS but it's not necessary.

As an MC geared warlock, I die no matter what spec you are, just try to throw a taunt whenever it's of CD.

The Protection talent is only necessary in progressive raiding. As long as your healer can do their job and pick up the minimal amount of slack that comes from missing those defensive talents, a warrior can tank in any spec. You can hold aggro just fine as long as you know what you are doing. In a worse case scenario, DPS needs to hold back. They should be waiting for sunders anyways.

when you say 420 or 440 you mean the defense that appears on the skill tab? which is 300 by default when you are lvl 60? or am I missing something?

He is adding the 300 in your skills menu, yes.

So from gear +120 / +140,

Or with protection talents:

+110 / +130.

Correct, but as a tank you should have 5/5 anticipation (+10 Defense)

That's 310 in your skills, so you need the rest from gear.

That is correct. You assume the person is lvl60 and got 300 def already.

they are both soft caps, there is no def hard cap. but to a point theres no reason to stack more of it, and health becomes more valueable.

technically you are correct.
Adding more def does help slightly improve Block/Parry/Dodge.
however 440 Def is considered "hardcap"
