If you can commit 2 nights a week to raiding, I see no reason why you would have any issue raid tanking and still have a life.
The established 10/10 1/1 guilds most likely already have there full time tanks, so you will most likely be asked to dps, and tank on 3 fights in MC. Over time, a tank may quit, get burned out or some drama may go down and they guild hop. Then it is next man up. You will be asked to off tank most fights, dps a very few.
There are many upcoming guilds that are not raiding yet but will be soon. You could join one of those under the impression you will be the main tank or first OT. I find this approach more fun as being apart of guild progression since day 1 is very rewarding.
