7 def is greater than 10 stam. I find that for every 1 def is about 3 stm in value. Example I use 9 stm bracer enchant over 3 def, but use core leather armor kit on boots over 7 stm.
Sto is correct 140 def isnt needed atm, but it will be. Assuming this is the case your goal is this -
130 def from gear 10 from talents. + 2%hit, stm/hp.
Armor is negligible as it takes about 400 for a 1%damage reduction of physical damage. Most things that will kill you in BWL are magical damage machanics. What you get from your gear is what you end with. Use 450 armor pot and 2k armor pots will negate this.
Dodge and parry - if you can chose 2 dodge or 8+ def, go with the def. 8 def equals 1% avoidance. (dodge, parry, chance to be missed) helps you be crit immiune and adds block chance. Focus on your def cap and hp/stam, if an item also gives dodge/parry. Great, but dont go out of your way for it.
Block chance/value. - the current lack of block value makes this a bottom priority choice for now. With later gear that has good block value coupled with def, it is an amazingly undervalued stat to stack. Reason- damage loss becomes less spikey, allowing heals to greatly increase efficiently. And the % block helps push crushing blows off the table without needing shield block EVERY time on CD. (some fights rage is limited for tps only with few chances for 100 uptime on shield block).
It short, dont let stamina stackers flex their nuts at you in raid, get def cap. Get hit bow, get av hit crit -stam ring. (accura if your guild is super nice and many have dropped for dps) that gives 2-3 hit. Use consumables for.rest.
