Nostalrius Begins - Quality wow vanilla realm (1.12)

I'm trying to decide which to use as a MH.

Hammer of Orgrimmar will give me more powerful sinister strikes, but Talonstrike gives me 3 agility and does more dps.

Could anyone tell me which is better and if you do, could you explain why?

You always want to have the weapon with strongest weapon damage since sinister strike scales with weapon damage. Dps and stats is not something you should look for if you want a mainhand. So in thus case i would say Hammer of Orgrimmar.
