Again, if you find yourself fighting mobs 3-4 levels higher than you, you're doing something wrong.

I found myself fighting mobs at that level at times whilst following the VanillaGuide. I had no problems doing all the stuff that was designed for hunters.

For what it's worth, following VanillaGuide religiously is probably not the best idea since it was intended for hunters. I tried to fight green/yellow mobs as often as I could. It just makes leveling so much faster rather than struggling against orange/red mobs. Doing dungeons at regular intervals and turning in all the quests usually meant that I had plenty of green/yellow quests available for me to do. Of course, there were occasions when I did not have this luxury, but for the most part I tried to.

If you are talking about Joannas vanilla guide I followed that and made it to 60 in 6days 8hs or so while doing 1 run of each instance for nostalgia on top so that guide is pretty darn good for priests.

Yeah, I followed it too. It's probably just a good idea to slightly overlevel beyond what the guide recommends is what I meant to say.
