I just have one question.. How do dwarf/human disc priests fair against rogues at 60? Say you're geared and somehow have that 5-6k health that priests on other servers always have?

Well the main problem as a Dwarf or a Human would be the fact that almost all rogues you'll be up against will be undead so they will be immune to mind control and your fear that has a 30sec cooldown, so you can't CC them.

As a human, You'll have to find them and force them out of stealth with perception before they get you (they will most likely run away or blind you).

As a Dwarf, fear and stoneform to get out of crippling and get as much distance as you can before they activate will of the forsaken, maybe you'll get a mind blast and a flash heal off, probably not since they will be sprinting at you from 10 yards away by now.
Dwarves can also Stoneform out of Blind which is good if the rogue is already out of stealth and is trying to escape.

You'll pretty much have to count on your shadow word: pain to do most of the work since they'll run around you and kick you and there is no way for a priest to CC an undead rogue.

If you can make the fight last for more than 1:30minutes and have used your fear on every cooldown you should be okay, since at that point you can fear them without trinket/wotfs and they will have blown most of their cooldowns by that point anyway.
So just endure and watch out for kick, as long as you survive long enough you will win in the end, but this might not be very likely depending on the situation since rogues have very bursty damage. 2K Eviscerates are not too uncommon to see as a priest.

This is just from my experience, maybe there is something I've missed or am doing wrong. I do some pvp but mostly for fun.

Physical immunity pot, tidal charm, invis pot if u manage to get ooc, pvp trinket, speedpot, speedtrinket from badlands q, Engineering... etc etc once hes out of control and dotted its faceroll.
