NElfs are awesome man, I wouldn't start anew if I were you. If you are into PvP and plan to play as Shadow, think about how easily you could ambush other players whilst waiting in Shadowmeld or how effectively you could deffend flags in Arathi Basin in stealth.

If I remember right and feel free to correct me if I'm not, you can start drinking and then activate Shadowmeld to remain unseen if you are getting corpse camped somewhere while leveling.

It's a very useful racial. Have fun with it!

Very few raiding guild will turn down priests just based on their race. Remember, Horde has no fear wards at all, though they do have tremor totems. Every raid-level tank should know how to stance dance anyway, so while fear ward is of course hugely useful, it's not so critical that human or nelf priests couldn't get raid slots.

Beta? I dunno. I started playing in like 1.2 or 1.3 and I can remember ever using it to drop combat.

Using Smeld in combat is live on retail. It has the same CD as vanish on retail (2 mins). They added the "in combat" functionality with a longer CD sometime during wrath or when Cata released. I do not remember. Smeld does have it's pluses in PvP, but as said, in PvE, it serves no purpose in raids or dungeoneering. Starshards is very situational and costs the same, if not more, mana than SW: P, and you shouldn't be DPSing as a healer anyway. To beat a dead horse, if the guild you are planning to join already has a couple dwarf priests, then Nelf would be a decent roll. 10 nature resist for the dragons of nightmare :/

Edit: Patch 3.0.2 (14-Oct-2008): Cooldown increased to 2 minutes, able to use in combat. Can no longer eat while in Shadowmeld. If you are eating and/or drinking and then Shadowmeld, you stop eating/drinking
