How easy/fast can resto shammys farm stuff at endgame, this is the one problem I have with rolling a healer instead of a lock. Is it totally shit and slow or can I get soloing quests alright?

Compared to a DPS class, it is "shit slow". Sorry to inform you, but that's vanilla. Hopefully you have a sick guild, with people that understand your huge value to the group as a healer, and are willing to pick up the slack and help you farm whatever you need.

I would say a priest would have an easier time dealing DPS, even with a healing talent tree. Resto shamans are very very useful in groups.
