Best Professions as a Mage?

I was wondering which professions I should pick. I want to PVP mainly when I hit 60. Would I be better off with two gathering professions to save up gold while I level?

Why would you recommend troll as a race? I'd think Undead Mage would be better suited to PvP than a Troll Mage.

obviously undead because of the will of forsaken racial. troll is for pve
