I'm wondering this aswell.

Are we allowed to countdown-loot the tubers, songflowers etc without risking bans for duping?

Many people are doing this so I'm sure there's many people who would appriciate a quick answer to this.

In other words: Doable and not something you got banned for back in the days. It got fixed later (2.0 or after) to make it only grant one player the items/buff.

http://wow.curseforge.com/addons/project-1384/ - An addon that was made during retail vanilla that even had a in-built countdown timer feature so everyone could gain the benefits from the felwood interactable plants (Tuber, NDB, Songflower, Windblossom).
In other words: People even made an addon to get the stuff together. You think someone would be dumb enough to make an addon for the public back then to exploit? Use common sense.

Sad Nostalrius staff have had to act like that..

I mean, if you did think it was clearly a bug (even if it was possible to do back on retail in 2004-2006) why didn't you guys didn't fix it like you did w/ Dire Maul North & fixied that? (hunter were able to solo it, Nost team clearly said it was an unfixed bug & fixed it by themself) instead of banning 3 guys that did only things that they were able to do 12y ago.
If those 3 guys you banned (Monkey, Rana, Slipry) really deserved a ban.. Many other people should be punished too.. Because they all clearly did it through their time on Nostalrius

I just want to know if this is a bannable offense so I can avoid a ban in the future.

I think that the Nostalrius GM staff should be a little more transparent if they decide that a standard practice from retail is going to be considered a bug on here, and make an announcement instead of people finding out by getting the ban hammer.
