Take it if you want it. It's not the most profitable profession, but it's an easy one to skill up. Killing hundreds of beasts for leather gives XP too. Doing laps around zones for ore/plants doesn't. Of course you could fight your way to the nodes, but you can't just sit and farm a spot like you can with leather. With skinning, your resource is on the mobs themselves, so you can just camp any area with a lot of beasts and grind both XP+Leather at the same time. If you want your dino leather, get help for them if you can't solo them. The difficulty just means you can charge more for them. If no one wants to buy them, then do something else with your time. Just farm regular leather. It was always valuable, and you can kill non elite beasts, or so I would hope, with little effort.
