You should play what you want to play mate.
Think aboutthe fact for how long this character will be in the center of your screen.
That's why I've rolled a dwarven warrior. Nothing looks better for me.

Choosing a class just because anyone tells you that its currently needed, makes no sense at all. Joining a guild because its currently recruiting that class makes no sense at all. Environments change monthly, that goes for most guilds.

What a raiding guild needs is people with strong personalities, ability to team-work, consistency, a will to play long-term, activity, dedication and the list goes on. Play the class you want to play and if you have the above mentionned things, you will be more valuable to most guilds than 90% of the players on the server.
About what guild to choose.. Read their recruitment messages, talk to people, check raidstats, their websites and so on. Chose the guild that has a suitable image and give your best to apply. The lower the recruitment status, the better you have to be to raid right away, if the recruitment status is closed, you might aswell try a social spot and show a little dedication and wait for a month.

I know this doesnt answer the authors question, but imo it should have never been asked that way :)

I agree with Aslan. Find a class you like, play it well, be a nice, reliable person and every guild will want you.
That being said, I feel like druids and warlocks are in high demand hordeside.

Feral druids are definitely viable, and a lot of the top guilds seem to use one (NOPE for example has a skilled feral, and currently leads the MC clear record).

Moonkin isn't really viable though. Enh shammy could be viable with a nightfall, but again, only one. Ele shammy has mana problems like moonkin, although can do insane burst.

Resto druids and resto sham/holy pal are always needed.

Here is the Talent Tree we have him run: http://db.vanillagaming.org/?talent#bVghsVVooZx0xp0x

The idea is that at the start of each fight, he puts up 5 quick rank 1 mindflays to get 5 stacks of shadow weaving, and then every 10 seconds or so does a rank 1 mindblast to refresh it

In the meantime, he raid heals, and has power infusion for a caster.

That way we get shadow weaving, power infusion, Raid Heals and only take up 1 debuff slot

I am not in the same guild as this person, but this is nearly the same spec I run. Tip, don't use mindflay, use r1 swp as it costs 22 mana and is taken off by nearly anything. Also, I am always put in the warlock's so that I can spam PoH inbetween trash/during a boss to keep their mana up (from life tapping).

Play whatever class/race/spec you want. The game is designed for you to enjoy. You will spend ages looking at your character so you might as well enjoy it.

Are tanks not in demand for raids and in guilds?
Was thinking of leveling one but I don't want to end up with pre raid gear and not able to progress because I can't commit to a strict raid schedule due to work.

For raids? No. For Dungeons? Yes.

Yeah it's great advice! If you don't want to raid.
