Open world PvP is about winning, by any means necessary. Usually it's non-consentual. It doesn't matter what the matchup is, what numbers are involved, or what your starting HP is. An enemy rogue or any other class has the option of choosing their moment to strike, there is nothing fair or even about that, and that's the way it should be. That's the very definition of open world PvP.
It's up to you to be creative enough to find a way to either avoid the gank, or to win. Make friends, quest in a group, hide a stealthed rogue alt near you, ask for help, counter-gank, bait the ganker into guards, make sure your trinkets are off CD, don't eat/drink out in the open, don't pull too many mobs at once, be strategic.
If you win, great work, well played. Enjoy your victory. If you lose, good fight. That's the only reaction you should ever give to any PvP, consentual or otherwise. Good fight, well played, king's to you. See you in the field next time.
Losing a non-consentual fight in WoW is virtually meaningless. You lose nothing but perhaps a few buffs and some time, maybe a few silver in repairs. None of that is worth any reaction outside of a simple "Good fight".
