Since you keep bringing up DFT for the sake of argument you can look at the Ebonroc drops, Malfurion's chest is supposedly 17,03% droprate while DFT is 17,43% (or 9% each if you want to believe wowdb). The probability of it being Malfurion's so many times in a row or so concurrently is pretty low since the actual loot table for these dragons is pretty big, each dragon has t2 gloves drop chance, unique loot table for the dragon and a shared one between them.
You can also look at those nice t2 shoulders for shamans and mages popping up a lot on Chromag.
I'm sure if you spend time looking at your own guilds' loot you can find patterns on what items drop often and what not.

bosses having broken loot tables where they are not supposed to drop items x and y
at the same time because of the way loot pools works, not that item z doesn't drop for guild c.
