Probably an Undead Rogue. Ambush, backstab, stuns...you know the drill. Also skinning and leatherworking.

We'll have to begin with a lvl 1 character, but the staff told us via this forum, that we would eventually be able to play our previous characters AFTER A LONG PERIOD OF TIME. This could mean 6months at least.
This is very clear for the staff and the beta testers. (although we would like to play our characters before, but it's not possible ...)

Night Elf (F) Druid or Dwarf (F/M) Paladin. Will make both but I'll see which I level up first. Then I'm probably making a Night Elf (F) or Dwarf (M) Hunter and a Human (F) Rogue for alts like I usually do. That's four characters so I'll have something to do for a long, long while.
