You can see a list of the majority, if not all, of the quests in WoW 1.12.1 here. Note that Nostalrius currently does not run on 1.12.1, so not every quest listed is now in-game.

What does Nostalrius run then? I thought the client was 1.12.1?

That would explain the number of missing quests in game I couldn't find then.

There's a difference between the version of your client and the version of the WoW emulation (MaNGOS) running on the Nostalrius server. MaNGOS comes with a database containing a plethora of stuff, including items, and a library of pre-scripted events (boss fights, escorts, etc.) called ScriptDev2. The Nostalrius crew has taken the MaNGOS 1.12.1 release and downgraded the database to the best of their ability to version 1.4. That's why you won't find some items/quests in-game that you'd usually find on a different private server running both the client and emulation version of 1.12.1.

So 500? Seems like a strangely even number, though i expect that is simply the limit on how many results it will show, in which case that doesn't help.

It's probably much less than 500, since some quests are horde only / ally only. Unless you were just asking about total in the game in all, and not completed by a single character. This is one of the reasons many people "hate" playing on a 1x server for vanilla, since it will practically force you to grind levels at certain parts of the game, instead of just leveling from quests alone.

There are 4244 quests in stock mangos 1.12.1.
