Is there any protection against hackers on the server who hack into your account and steal your stuff?

Nobody is going to 'hack' your account unless you let them.

Tank responsibility for your own shit for once. Yeah, it's a tough thing to do, I know. /sarcasm

Sadly, no. You can try to get your account back but the GMs aren't going to help you get your stuff back.

Just sit behind 7 proxies and you're fine.

there is no need for kind of protection if you keep your login-data safe...

also dont use that easy passwords like 123456 or p4ssw0rd
(oh wait, dont try it on my account!!!11111oneeleven)

there also was never a hack in real WoW to get any passwords.
just keep it safe and everything will be fine.

edit: biggest mistake is submitting login-data by email or an lazy form on an internet-site. this was the problem in the past, why some ppl lost their accounts in live-WoW...

The difference is that Blizzard always restored your stuff if you lost it.

Nostalrius don't.

Blizzard has a lot of stuff they can used to prove your identity, one of them is the code off your original WoW box, the easiest one being your email, which Nostalrius can't be arsed to use.
