Title. If I start lvling now do I miss molten core etc?

You won't miss any content at all. There are alot of guilds that are still on MC progress. Also there are pug groups for MC almost everyday.

What Adwena said, if you find a guild just starting out raiding you will not miss anything in vanilla you couldn't skip entire raids since it was required to gear in previous raids to move on to the next.

There is loot from MC bosses that is considered BiS way into AQ and even Naxx. Also, as long there are guild-tanks needing thunderfury, there will be guilds running MC.

There's always going to be alts as well, MC is always going to be done, all content is always going to be cleared, there's a HUGE chunk of population that still hasn't even hit 60 yet
