Profitable profession

First of all finding this server with such a great community and stable server, is amazing!
Now to the question
As stated I just started out, and want to early on find a profession. That somewhat will make a stable income, from what I've heard mining and herbalism is over-farmed. From scanning the market a bit, skinning seems to be a stable profession atm.
What are your experiences ?
