So I'm kinda curious. I am running Bar2, and I'd like to have a bar for interrupts all that. Was curious as to what exactly bonusbar does and how it funtions?
I put some abilities on it, and then they also landed on my #1 action bar.

BonusBar afaik is used for things like warrior stance buttons, druid forms, rogue stealth etc.
Don't know what Bartender does (if that's Bar2 you mention)

^ was correct.
bonusbar is not a "real bar", bonusbar is the element in which the stance bars are being shown.
eg. as warrior your stances each have a bar which must be bar7-bar9 if I remember correctly.
bonusbar at bartender is just an element which saves the display where the stancedependant bar is shown,
while the content of the stancedependant bars is being saved in the apropriate bar which eg would be for battle stance bar7.
That explains as well why the spell you put in it was displayed in bar1
