As many people already said, no need to rush to 60. Keep in mind, the current state of the (vanilla) game has very limited raiding playgrounds: MC, Ony, and that's about it, for some quite long time, the devs will respect the scheduled content release. So, if you mostly enjoy raiding, and if you start now, by the time you are 60 with your main, with a bit of luck you will join a solid guild that already has all the raids on farm and mostly raid-log once a week and that's about it, plus some consumable farming with your main or your alt, depends if you want only crafiting or also gathering professions. Then the urge to join the bandwagon of wailers/moaners that want "moar raids NAU!" will be strong and you will end up annoyed and bored. Happened to all of us sooner or later. But, if you also enjoy end-game PvP on PvE servers, which means duels (lol), BG, AV etc, then you will be able to squeeze some more 'juice' from the game.
As for instances, i believe most of the pre-raid BiS items are found in instances, some can be crafted, a few can be bought, a couple can be rep-farmed for. Then, Strat-Scholo-DireMaul-BlackRock mountain.So, no way to evade a lot of instancing, it really is a vanilla server: bitch. moan, curse..and get on it with the grind..
